Do you put sauce on TOP of your pasta? That’s all wrong...







A lot of us are doing pasta all wrong...  

Chef Andrew Carmellini, author of “Urban Italian,” says pouring out the starchy water we cooked the pasta in is our first mistake. Save that, you’ll need it later. Another common mistake: rinsing the pasta. You’ll rinse the silky starch off. The most common mistake most of us make is putting the sauce on TOP of our pasta. 

For the perfect dish of pasta, Andrew says to remove the pasta from the water and add it to the pot of hot sauce. Cook it together for about a minute. Then, add a ladle-full of that starchy water you saved to the pasta and sauce for a nice shiny finish. Add a bit of butter, olive oil, grated cheese and fresh herbs and mix those into the pasta before serving instead of sprinkling them on top.
