How do you dress your salad or scramble an egg? Advice from a physicist...


The next time you’ll be serving salad, don’t drizzle the dressing over the top...

According Nathan Myhrvold, physicist and author of “Modernist Cuisine at Home,” you really need to put the dressing in the bottom of the bowl and THEN add the salad. Give the greens a toss and you’ll wind up with a thin, even coating. Nathan says lettuce will become oversaturated quickly if the dressing is poured over the top.

So how does a physicist scramble eggs? Nathan says there’s a science to that too. He suggests using the two-and-a-half ratio – two whole eggs and just the yolk of the third. Your eggs will be richer and creamier with a softer texture.
