What’s so great about cow’s milk?


Lot’s of animals produce milk - but we seem to prefer it from a cow. 

There’s nothing about cow milk that makes it any better for us than giraffe or dolphin milk - it’s just easier to get. According to Michael Van Amburgh, who specializes in dairy management at Cornell University, it’s all about economics and what we’re used to. 

Cows are docile and easy to manage, which gives them the monopoly on the milk industry. Sheep and goats are steady milk producers too but they run around a lot and are much harder to wrangle than cows. It’s also hard to compete with the sheer volume of milk produced by a cow - ten gallons per day compared to a measly half gallon per goat.
