The next time you bake a pie, grab the vodka first. Anyone who loves pie knows the crust is just as important as the filling. According to Cook’s Illustrated publisher, Chris Kimball, vodka is the secret ingredient to the best crust you can make. Substituting vodka for the cold water you would normally use keeps the dough pliable to work with – but evaporates more effectively while baking – resulting in an extra flakey, perfect pie crust.
