The oils that make the beans or grounds taste so good will break down in freezing temperatures. Once the coffee dries out like that – it actually absorbs all the contradicting flavors that happen to be right next to it.
Roast master Aaron Meza, of Paradise Coffee Roasters, says the ideal shelf-life for coffee is 14 days for espressos and 21 days for other brews – at room temperature. It won’t hurt you after that – it just won’t taste as good. If you don’t go through a lot of coffee, buy it in smaller amounts.
