The next time you make a salad - think small...

Microgreens are the new big thing. They’re the young seedlings of our favorite vegetables and herbs and they’re packed with up to 40 times the nutrients of their big greens counterparts. Microgreens are typically harvested about two weeks after germination. They’re tiny, about one to three inches long, and are super-concentrated with vitamins and nutrients. Their flavor also packs a powerful punch. They’re more intense than the vegetables and herbs we’re used to, so a little migrogreens can go a long way as a garnish or tossed into a regular big-leaf salad.
