The next time you throw leftovers in the fridge – let them cool off first....
Go ahead – leave those leftovers on the counter – at least until they are completely cool. According to food safety consultant Peter Snyder, it’s safer than putting them away while they’re still warm. When you put hot or warm food into the fridge – it takes longer for the temperature in the middle to drop. The cold temperature of the exterior combined with heat in the middle just creates a moist environment for bacteria to thrive.
