More Pomegranates

Pomegranates are beautiful AND good for you – but how do you get those ruby arils out?

You’re probably seeing a lot of pomegranates around – they’re festive and it’s peak season. If you’re hesitant because they can be messy and tricky to prepare – there’s an easy way to do it:

• First – cut off the crown, then score the pomegranate from top to bottom along its sections. Try to cut through the skin but not into the fruit.

 
• Then – submerge the whole thing in a bowl of cool water and let it sit there for a few minutes.

 
• Next – break the sections apart under water and roll out the arils – or seeds - with your fingers. Those beads will sink and the other stuff will float to the top.

 
• Finally – skim the white pulp off the top of the water then strain or scoop the arils out with a slotted spoon.

Separating a pomegranate under water prevents those ruby red beads from rolling all over the place AND prevents the juice from staining your fingers.
