In order to get perfectly grilled food, you need to avoid flare-ups. Those lead to uneven heating, making it hard to predict when it’s done. It’s important to leave plenty of space between your cuts of meat and fatty foods. That way, when there is a flare-up, you’ll have room to move that cut to a cooler spot on the grill.
If you have the type of grill with an adjustable grate, go ahead and move that up a bit. It may add a few minutes to your cooking time but you’ll have fewer flare-ups and more evenly cooked food.
