Super fresh eggs are great – unless you’ll be dyeing them for Easter.
Fresh eggs are harder to peel so you’re actually better off buying your eggs at least a week before you’re planning to boil them. A few days after an egg is laid, the membrane inside slowly separates from the shell. Freshly laid eggs also have a natural protective coating that makes them less porous and harder to dye, so it’s a good idea to rinse them off first.
Some egg processors spray their eggs with an additional protective coating of mineral oil which also makes them harder to dye and is difficult to wash off. When choosing your Easter eggs, take a good look inside the carton and avoid any that have a sheen to the shell.
